Main Description.

 

Paya is a traditional food from the Indian Subcontinent. It is served at various festivals and gatherings, or made for special guests. Paaya means ‘legs’ in Hindi. The main ingredients of the dish are the trotters ( goat, or sheep); cooked with various spices

Health Benefits

Ingredients

  • Salt to taste

    4  Large Payas (trotters)

    1  Teaspoon Crushed Black  peppers

    1 Tablespoon Ghee

    1 Teaspoon Garlic Paste

    1 Teaspoon Ginger Julienne

    1 Small onion Sliced or Chopped

    1/4 Teaspoon Turmeric  powder

    1/2 Teaspoon Cumin powder

    1/2 Teaspoon Coriander powder

    1/2 Teaspoon Chili powder

    2 Green Chili slit

    Chopped Coriander (Garnish)

    1/2 Lime Juice

    2 Cloves

    1 Cinnamon stick

    2 Cardamon

    1/2 Teaspoon Pepper corns

    1 Litre drinking water

Instruction

  • 01

    Add salt & Crushed Black Pepper to the Paya & Marinate for 15 Mins.

  • 02

    In a pressure cooker, add ghee, as soon as it melts, add Cinnamon, Cardamom, Cloves, Pepper Corns, bay leaf, fry for a minute, add the Garlic paste & Ginger Julienne, and further fry till the raw smell disappears.

  • 03

    Add the Onions and fry till Golden brown.

  • 04

    Add the Powders turmeric, red chili, coriander, cumin, Mix well & fry for 2 to 3 mins, add little water if the powders are burning,

  • 05

    Add the Payas & open fry for 5 mins on high heat, add the drinking water, Close the lid & allow it to cook on medium heat for 5 to 6 whistles, depending on the tenderness of the paya, you like.

  • 06

    Open the lid of the cooker & further cook for 5 to 7 mins, check the softness of the paya & adjust the consistency of the soup, squeeze the lime & garnish with chopped coriander & green chili slit.

Tips
  • Make sure when you cook your onions should be golden brown & not dark brown.

Main Description.

Corn soup is a soup made of corn, typically sweetcorn. Initially popular only in corn-producing areas of the world, the dish is now widespread because of greater corn distribution.

Typical ingredients are corn cut from the cob, water, butter and flour, with salt and pepper for seasoning. Additional ingredients vary by region, and may include eggs.

I just love and can have soups on a daily basis, and this one is my life time favorite soup.
Whenever I visit restaurants this soup is always on top of my list or rather this is the only soup I always ordered out.

Ingredients

  • 350 GMs of Chicken with bones (I used chicken thighs with bones)

    2 Bay leaves

    4 Garlic Cloves with skin on

    Small onion roughly cut in four large pieces

    10 Black whole peppercorns

    1 Litre drinking water

    Salt to taste

  • Other Ingredients

     150 GMs Frozen Corn

    2 Tablespoons Corn Flour mixed with  8 Tablespoons water

     2 Whole Eggs Beaten

     0.5 Teaspoon Black Pepper powder

  • 01

    Add the above ingredients with the chicken in a wok a litre of water and allow it to boil for 25 to 30 mins.

  • 02

    Once the chicken is cooked, in a strainer remove the chicken and the ingredients.

  • 03

    Shred the chicken completely in small desired pieces and keep the Chicken Stock on the gas, allow it to cook

  • 04

    Add the corn with a little water, and grind it in a grinder and make sure you keep some chunks and do not make a smooth paste, add the corn to the stock.

  • 05

    Add the shredded chicken, add black pepper powder, add salt to taste.

  • 06

    Allow it to cook for 5 mins on medium heat, add cornstarch slurry and mix well.

  • 07

    Finally add the beaten whole eggs or only egg white if u prefer and stir gently.

  • 08

    Garnish with some handful of whole frozen corn, some spring onions and sprinkle very littlechopped coriander’s cook max to 2 to 3 mins.

Main Description.

Generally, when you go through the Ingredients of other Creamy soups it is mostly prepared by using cream, light cream, half and half or milk as a key ingredient. Sometimes the dairy product is added at the end of the cooking process, such as after a cream soup has been puréed, But this Recipe will surprise you, with no external cream this soup turns out as good as other Creamy soups but healthier version.

Ingredients

  • 300GMs boneless Chicken breasts

    2 tablespoon butter or Olive Oil for Healthier option (reduce accordingly)

    1 tablespoon chopped Garlic

    1/2 Medium roughly chopped onions

  • 2 tablespoon chopped celery sticks

    1 tablespoon all purpose flour

    Salt to taste

    1/4  teaspoon black crushed pepper

    Sprinkle little dried thyme

    Sprinkle Little Coriander for Garnishing

    In a heated wok, add butter or olive oil, allow it to melt, add chopped garlic, onions, celery, and stir well for 2 to 3 mins, don’t brown it.

  • 02

    Add the chicken pieces, add all purpose flour, mix well, add water until the chicken is fully covered, add dried thyme, you can use chicken stock as well (optional) Cover and cook for 10 to 15 mins, allow it to cool down.

  • 03

    Add the boiled chicken in the grinder, add little soup which was cooked with the chicken, approximately half cup and grind it to a paste and strain it in a strainer if required and make sure all the paste is well strained and bring it back to the wok and the remaining stock and cook, until the soup is boiled, adjust consistency accordingly, add peppers and coriander for garnishing

Tips
  • Diet Soup

  • If you do not have boneless breasts, take half 500 gms whole chicken with bones, boil it and shred it after cooling down, and follow the cooking instructions, the results will be the same.
  • If you are on diet….

    Butter can be replaced with olive oil.

Most of us don’t like eating peas like me I believe, but on the other hand I love soups and once I was introduced to this soup in the middle of the ocean (offshore) and I immediately loved it and went on the Internet to see the ingredients and instructions, with very less information and cooking instructions about this humble soup, I decided to give it a shot and the results did satisfy me and my family’s taste buds.

It’s a Great Humble yet Super delicious soup, worth a try.

Ingredients

  • 200 gms Green Peas

    1 small size onion chopped

    10 coriander sprig chopped

    10 Mint Leaves

    2 cup coconut milk

    1 Tablespoon chopped garlic

  • 1 tablespoon of coconut oil

    1/2 teaspoon Black Crushed Pepper (please adjust the heat accordingly)

    1 Chicken Cube or Vegetable cube (optional)

  • 01

    In a heated wok, add coconut oil, add chopped garlic, sauté for a minute add onions and fry it until golden brown.

  • 02

    Add the frozen or fresh green peas, mint, coriander, and add water or (vegetable stock) optional or (chicken stock) and allow it to boil for 10 mins, add salt and crushed peppers, switch off the flame and allow it to cool down.

  • 03

    Add the mixture in a blender and blend it to a smooth paste, strain it in the strainer.

  • 04

    Bring back the paste in a pan, add little water for consistency, later add coconut milk and bring it to boil, adjust the salt and the soup consistency accordingly.

Tips
  • Add and subtract the ingredients accordingly, it’s just a humble soup.

Main Description.

Man chow soup is a soup popular in Indian Chinese cuisine due to its easy preparation and hot spicy taste. It is available in many restaurants and street food carts alike. Although the soup is named after Manchuria it does not resemble any that is normally found in the cuisines of the region. The origin of Man chow soup is Meghalaya

Ingredients

  • 1 Medium sized carrots chopped in small diced

    1 cup button mushrooms sliced

    50 gms of Corn (optional)

    1 half small onion finely chopped

    1 tbsp vegetable oil

    3 tbsp spring onions chopped

    1 tbsp Ginger finely chopped

    1 tbsp ,Garlic finely chopped

    4 tbsp light soy sauce or 2 tbsp dark soy sauce.

    1 tbsp Red chili sauce

  • 2 teaspoon vinegar

    2 Tablespoon Tomato Ketchup

    4 cups water or vegetable stock or chicken stock for added flavor (completely optional)

    Salt to taste

    1 tsp sugar

    1/2 tsp black pepper powder

    2 tbsp corn flour mixed with 6 tbsp water

    Add Finely chopped spring greens and coriander for Garnishing

    In a heated wok add oil, and add chopped ginger/ garlic and the sliced chopped onions. Toss and stir fry on high flame for 2 to 3 mins.

  • 02

    Add soy sauce, white vinegar, red chili sauce, and tomato ketchup and mix well. Add salt, sugar, black peppers. Then add the mushroom in the last.

  • 03

    Add water or vegetable stock and boil on high flame for 2 to 3 mins.

  • 04

    Mix corn flour with cold water until no lumps are seen and add it to the boiling soup.

  • 05

    This time add spring greens and coriander for Garnishing.

Tips
  • Serve Hot.
  • Add or Subtract the sauces as per your taste buds.
