Main Description.

Chicken tikka masala is a dish consisting of roasted marinated chicken chunks (chicken tikka) in spiced curry sauce. The curry is usually creamy and orange-colored. There are differing theories regarding the geographic origin of the dish, broadly split between those attributing it to cooks from South Asia living in Great Britain, and those that view it as being created on the Indian subcontinent. The dish is offered at restaurants around the world.

Ingredients

  • Marination

    750 gms chicken with bone or boneless

    Salt to taste

    1 Tablespoon Garlic paste

    1 Teaspoon Ginger paste

    1 Tablespoon Red chili powder

    1/2 Teaspoon Turmeric powder

    1 Tablespoon Garam masala

    1/2 Tablespoon Cumin powder

    4 Tablespoon Curd

    Mix and marinate it for 30 mins at least.

  • Cooking Ingredients

    2 Tablespoons Butter

    1 Large Chopped Onion

    1 Teaspoon Ginger Paste

    1 Teaspoon Garlic Paste

    1/2 Teaspoon Turmeric Powder

    1 Tablespoon Coriander Powder

    1 Teaspoon Cumin Powder

    1 Teaspoon Garam Masala 

    4 Tablespoons Tomato Paste (Readymade)

    1 Tablespoon Red Kashmiri Chili powder

    7 Tablespoons Fresh Cream

    1 Tablespoon Coriander Chopped

Instructions

  • 01

    In a Frying pan add sufficient oil for shallow frying the marinated chicken up to 10 mins, After the chicken is fried in the same pan add butter, allow it to melt, add onions, sauté it for seven mins till it turns golden brown.

    Add Ginger Garlic paste, sauté for two mins, add turmeric powder, coriander powder, cumin powder, Garam masala, roast it for two to three mins max

  • 03

    Add readymade tomato paste and Kashmiri red chili powder, fry it for at least six to seven mins, add little water if required, add salt to taste, add fresh cream, depending on the consistency and creamy taste u would prefer, add the fried chicken, mix well and sauté for max two mins, add freshly cut coriander for garnishing.

Tips
  • Always first add salt to the chicken while marinating, it plays a very important role in brining and seasoning.
  • Adjust the cream accordingly depending on the consistency of the gravy.
  • Using Charcoal smoke (optional) gives an amazing restaurant flavor in such thick gravies.
