Main Description.

Corn soup is a soup made of corn, typically sweetcorn. Initially popular only in corn-producing areas of the world, the dish is now widespread because of greater corn distribution.

Typical ingredients are corn cut from the cob, water, butter and flour, with salt and pepper for seasoning. Additional ingredients vary by region, and may include eggs.

I just love and can have soups on a daily basis, and this one is my life time favorite soup.
Whenever I visit restaurants this soup is always on top of my list or rather this is the only soup I always ordered out.

Ingredients

  • 350 GMs of Chicken with bones (I used chicken thighs with bones)

    2 Bay leaves

    4 Garlic Cloves with skin on

    Small onion roughly cut in four large pieces

    10 Black whole peppercorns

    1 Litre drinking water

    Salt to taste

  • Other Ingredients

     150 GMs Frozen Corn

    2 Tablespoons Corn Flour mixed with  8 Tablespoons water

     2 Whole Eggs Beaten

     0.5 Teaspoon Black Pepper powder

  • 01

    Add the above ingredients with the chicken in a wok a litre of water and allow it to boil for 25 to 30 mins.

  • 02

    Once the chicken is cooked, in a strainer remove the chicken and the ingredients.

  • 03

    Shred the chicken completely in small desired pieces and keep the Chicken Stock on the gas, allow it to cook

  • 04

    Add the corn with a little water, and grind it in a grinder and make sure you keep some chunks and do not make a smooth paste, add the corn to the stock.

    Add the shredded chicken, add black pepper powder, add salt to taste.

  • 06

    Allow it to cook for 5 mins on medium heat, add cornstarch slurry and mix well.

  • 07

    Finally add the beaten whole eggs or only egg white if u prefer and stir gently.

  • 08

    Garnish with some handful of whole frozen corn, some spring onions and sprinkle very littlechopped coriander’s cook max to 2 to 3 mins.

Main Description.

Most of us don’t like eating peas like me I believe, but on the other hand I love soups and once I was introduced to this soup in the middle of the ocean (offshore) and I immediately loved it and went on the Internet to see the ingredients and instructions, with very less information and cooking instructions about this humble soup, I decided to give it a shot and the results did satisfy me and my family’s taste buds.

It’s a Great Humble yet Super delicious soup, worth a try.

Ingredients

  • 200 gms Green Peas

    1 small size onion chopped

    10 coriander sprig chopped

    10 Mint Leaves

    2 cup coconut milk

    1 Tablespoon chopped garlic

  • 1 tablespoon of coconut oil

    1/2 teaspoon Black Crushed Pepper (please adjust the heat accordingly)

    1 Chicken Cube or Vegetable cube (optional)

  • 01

    In a heated wok, add coconut oil, add chopped garlic, sauté for a minute add onions and fry it until golden brown.

  • 02

    Add the frozen or fresh green peas, mint, coriander, and add water or (vegetable stock) optional or (chicken stock) and allow it to boil for 10 mins, add salt and crushed peppers, switch off the flame and allow it to cool down.

  • 03

    Add the mixture in a blender and blend it to a smooth paste, strain it in the strainer.

  • 04

    Bring back the paste in a pan, add little water for consistency, later add coconut milk and bring it to boil, adjust the salt and the soup consistency accordingly.

Tips
  • Add and subtract the ingredients accordingly, it’s just a humble soup.

Main Description.

Red Thai Curries are very popular all over the world for their coconut and fresh ingredients which are locally available in their region. My first experience of eating a Thai curry was in Dubai, and immediately i loved it, as the taste related so similar like our own Mangalorean cuisine from where we Soans originally come from.

Ingredients

  • 500 gms chicken thighs cut into bite size

    3 Tablespoon Coconut oil

    1 Tablespoon Chopped Onions

    1 Tablespoon Chopped Ginger

    1 Tablespoon Chopped Garlic

    200 GMs Vegetables of your Choice

    (Broccoli, Capsicums, Mushrooms)

  • 1/2 Teaspoon Black Crushed Pepper

    Salt to taste

    1.5 Tablespoon ready-made Red Thai paste

    2 coconut milk up to 2 cups

    1 Tablespoon Fish sauce

    1 Teaspoon Red Chili for garnishing

  • 01

    In a frying pan, add half of the oil as per the above ingredients section, add the chicken pieces, and fry the chicken for 5 to 6 mins, as soon as the chicken is fried and water(stock) is released, remove and keep it aside in another vessel.

  • 02

    In the same pan add the remaining oil, add chopped onions, ginger and garlic, sauté well till it’s translucent, add vegetables of your choice.

  • 03

    Add black pepper & salt to taste, and stir fry it for 3 mins, remove only the veggies and keep it aside, as we would not like them to be over cooked.

  • 04

    Add Red Thai curry ready-made paste, and fry it for 2 mins and keep stirring, add the coconut milk and bring it to a boil, add the fried chicken and mix well.

  • 05

    Add Fish sauce, mix well and let it further cook for 15 mins, finally add the Vegetables that were stir fried earlier, and garnish roughly sliced red chilies.

Tips
  • Buy a Premium brand of Red Thai curry paste, it comes handy as Thai ingredients are not available everywhere.
  • You can always use a chicken cube stock mixed with little hot water.

  • Best with Rice.
