Chicken Chilli

Ingredients

  • Marination

    250 GMs boneless chicken thighs

    250 GMs boneless chicken breasts

    Add ½  a teaspoon salt 

    Add 1 teaspoon  crushed black pepper

    Add 1 tablespoon white Vinegar

    Add 2 tablespoon of dark soy sauce

    1 tablespoon  Garlic chopped

    Add 2 Chillies finely chopped

    1 whole Egg

    Mix well and Marinate for at least 15 mins

  • Batter Coating Ingredients

    In the marinated chicken bowl

    Add 3 Tablespoons of all purposeflour

    Add 2 Tablespoons of corn flour

    1 Tablespoon of rice flour

    1/4 Teaspoon of baking soda

    Mix well, add little water for consistency, and deep

    fry the chicken for 5 to 7 mins Max.

  • Cooking Ingredients

    2 Tablespoons Tomato sauce

    2 Tablespoons oil

    1 Tablespoon Garlic Roughly Chopped

    1 Teaspoon Ginger Finely Chopped

    1 Small Capsicum diced

    2 Slit Green Chilies

    1 Cup Water

    2 Tablespoons dark soy Sauce

    1 Teaspoon White vinegar

    1 Teaspoon sugar

    1 Maggi cube optional 

    3 Tablespoons Corn Starch Slurry 

    1 Tablespoon spring onions.

Preparation

    In a Large Wok, add oil, as soon as the Wok is very Hot,

    Add Chopped garlic and Ginger and sauté it for a minute, add diced Capsicums, green chillies, and continue to sauté it for another 2 mins,

    Add one cup water, as soon as the water begins to boil, Add soy sauce, White vinegar, tomato ketchup, and sugar,

    Mix well, in a small bowl mix one cube Maggi Chicken stock (optional) with hot water and add it to the wok,

    Add the fried Chicken and sauté it for two mins and finally add one table spoon of Corn starch mixed with two table spoon of water in a bowl add it to the gravy for consistency,

    Garnish with some cut spring onions.

Tips
  • Chinese cooking is Generally on High heat
  • Use a thin wok always for Chinese cooking
  • Use garlic and chillies for marination as the flavours will be right below the coating
